Fava Beans with Yogurt

Fava beans with yogurt or Foul b Laban is a popular stew made especially in the Spring season when fava beans are freshly picked. It is a delicious Lebanese dish, served with rice. It is very healthy and rich in proteins and complex carbohydrates as well as many vitamins and minerals that are important for health. 

Ingredients

  • 1 Kg Plain Greek yogurt
  • 1 Kg Fava beans
  • 3 cloves Garlic
  • 1 onion
  • 1 tbsp. Corn flour
  • ½ kilo of lean meat cut in squares
  • Meat broth
  • Cilantro or coriander
  • Vegetable oil

Directions

  1. Cook the meat with spices and onions and keep the broth. (You can prepare this ahead of time and freeze them for later uses).
  2. Stir fry the fava beans with oil, then add the meat and broth to them and let them cook for a while.
  3. In the blender put the yogurt, with the garlic and the corn flour and mix well. Then it on slow fire and keep on stirring until it boils.
  4. After the yogurt turns to a boil add the meat and fava beans to it.
  5. In a saucepan, stir fry the cilantro with some olive oil or butter, I’d rather olive oil which is healthier, then add it to the mixture and bring them to boil.
  6. Cook some rice to be served on the side.

A vegetarian version can be prepared by simply omitting adding the meat (and stock) to the stew and replacing them with water.
